Oenos Malo-Lactic Nutrient is a complex nutrient formulated for growth and survival of malo-lactic bacteria. Unlike yeast, bacteria cannot store, nor synthesize all essential amino acids, so complex nutrients must be supplemented. Newly fermented wine can often be deficient or void of nutrients due to yeast utilization (especially by Saccharomyces bayanus). Nutritional depletion can cause sluggish or even stalled malo-lactic fermentations. Due to the complex nutritional requirements of malo-lactic bacteria and the relatively harsh medium for growth, minimizing nutritional stress is important. In addition to amino acids and peptides, which are the most influential nitrogen sources required for malo-lactic growth, B-complex vitamins and trace minerals are especially important. Oenos contains a diverse blend of organic protein sources (no inorganic nitrogen sources, since bacteria cannot utilize them), vitamins and trace minerals. In most cases, Oenos will provide a 20 – 40% faster malo-lactic fermentation.
2 gm size is sufficient for 5 or 6 gallons of wine. Add Oenos to wine at the time of inoculation with malo-lactic culture. Simply dissolve in warm water and mix into the wine.
